A true carbonic carignan, sealed in a tank for 10 days, then pressed back to stainless to finish fermenting and aged 5 months.  In a true carbonic maceration, the initial fermentation is not caused by yeast, but instead occurs intracellularly, or from the inside out, but it is not carbonated! Best enjoyed in 2024.
